Add granulated sugar and vanilla sugar.

If it is not possible to buy high-quality homemade cottage cheese, you can prepare it at home from good live (with a short shelf life) kefir. To do this, pour kefir into a glass or metal container and place it in a water bath (in a pan of water, for example, in a colander). Cover with a lid and simmer the kefir for 20-30 minutes over low heat. It is advisable that the kefir does not boil, otherwise the grains will turn out more rigid. Then we filter everything through cheesecloth, tie the cheesecloth with the curdled mass into a knot and hang it on a spoon in a deep pan so that there is somewhere for the whey to drain. There are many devices for weighing cottage cheese: for example, you can put the cottage cheese in a sieve with small holes, or you can line a colander with gauze. Leave for 3-6 hours. From 1 liter of full-fat kefir you get about 200 g of cottage cheese.

Place 200 g of cottage cheese into a bowl for kneading dough. If you are preparing cheesecakes for the whole family, increase the proportions of ingredients. Grind the cottage cheese with a fork, grind through a sieve or puree with an immersion blender.

2. Break one large chicken egg into a bowl with the cottage cheese and mix thoroughly until a homogeneous mass is formed.

3. Add 1.5 tbsp to the curd mass. sugar and a pinch of salt. Instead of sugar, you can use condensed milk or honey to taste.

4. Sift the wheat flour and add to the rest of the products in a bowl. Add 0.5 tsp. baking powder for the dough to make the cheesecakes more fluffy. Add 2 tablespoons of flour, mix so that there are no flour lumps left and look at the consistency. If the mass turns out to be liquid, you can add 1 more tablespoon of flour. We arm ourselves with a grater with small holes and grate the lemon or orange zest, not reaching the white film. Add a small amount of lemon zest to the bowl with the ingredients. Thanks to the zest, the finished cheesecakes will be incredibly fragrant. It can be used dried, although fresh it is more aromatic.

5. Wash the red, black and white currants thoroughly, cut off the leaves and stalks. Dry the liquid in a colander or napkin, then add to the curd mass. Gently stir in the juicy berries, trying not to disturb their integrity.

6. Turn on the oven to preheat at 180 degrees. Very beautiful cottage cheese pancakes with berries in the oven are made in portioned silicone molds. Spoon the curd and berry mixture into them. Place in the oven to bake for 30-40 minutes. The baking time is individual for each oven and depends on its power. Focus on your technique.

Now it’s time to add black currants. Add the berries to the curd mixture for cheesecakes carefully, because... ripe berries may become damaged and release juice, then it will be more difficult to shape the cheesecakes and you will have to add more flour.

It’s good to heat the frying pan and the sunflower oil in it. You can use sunflower oil with olive oil. It doesn't give that greasy aftertaste when using it.

Use your hands to form cheesecakes and roll them on both sides in semolina. To prevent cheesecakes from sticking to your hands when forming, you should wet them before modeling in cold water. Then the sculpting procedure will be greatly simplified.

And carefully lower the cheesecakes into the heated oil. Thanks to semolina, the cheesecakes will have a very appetizing crispy crust.
