Often visiting the vegetable market, I first of all pay attention to the presence of green or asparagus beans. It cooks faster than pasta. Dishes made from it are nutritious and healthy. More protein than beef or pork. Amino acids and microelements, which are contained in the shoulder blades of unripe beans, increase immunity and serve as the prevention of cancer.
This time, I was attracted by the blue beans of the Blauchilde variety. Despite the exotic appearance, the process of its preparation is not particularly difficult.


Let's get started by preparing all the ingredients!


Place blue green beans - "Blauhilde" - in boiling water. It instantly changes color to the usual green. Boil for 7-8 minutes. Drain hot water, fill it with cold, ice water. Place in a colander and let the water drain completely.
This technique is necessary so that the boiled beans in the shoulder blades retain their shape and rich color.


Trim the ends and tails.


We reduce the size to the required size, no more than 4-5 cm.


We clean the sweet bell peppers from seeds and veins. Cut into thin strips.


In a dry frying pan, fry the sesame seeds until golden.


Let's start the main assembly.
Melt the butter. Add finely chopped garlic and sweet pepper. Fry for 5-7 minutes.

Preparing the snack begins with blanching the beans. Wash the bean pods. Cut off the stems and tails with a knife. Peel the garlic cloves. Pour water into a saucepan and bring it to a boil. Place the beans in boiling water. Stirring, cook it for 2-3 minutes.

Thanks to a short heat treatment, green beans will become softer, but at the same time they will not cease to be crispy and juicy. Use a slotted spoon to place the beans on a plate. Place in a colander and rinse under cold water. Let the water drain. Dry the boiled green beans with napkins so that they do not splatter too much in the hot frying pan.

Pour olive or sesame oil into the pan. Although, it is worth noting that the choice of one oil or another will not greatly affect the taste of green beans. Place beans in a hot frying pan.

Stirring, fry for 3-4 minutes. Squeeze the garlic into it through a press.

After that, sprinkle it with spices for extra flavor.

Sprinkle with soy sauce. If you think that the beans will not be too salty due to the sauce, then you can salt them. After adding soy sauce, fry the beans for another 2-3 minutes.

As for the degree of frying of the beans, the situation with them is exactly the same as with the garlic arrows. If you want the beans to be crispy and green, fry them less, and if they are browned and have fried sides, then keep them in the pan longer.
