Another mandatory element is cheese, but otherwise you can give free rein to your imagination (unless, of course, you are faced with the task of preparing an authentic frittata, but in this case it is better to turn to Italian sources).

Frittata with vegetables

2 servings

4 fresh eggs
handful of grated parmesan
bunch of parsley

2 cloves garlic
1/2 red onion
1 medium tomato
1/2 sweet pepper
1 cup green beans

Break the eggs into a bowl, season with salt and black pepper, add Parmesan and chopped herbs and beat lightly. Put the omelette base aside, we'll come back to it a little later, but now let's agree. Frittata is not a very fussy dish, so use whatever vegetables you have in the refrigerator. I had the set of products already described, and I should proceed with it as follows.

Chop the garlic, cut the onion into rings, cut the pepper and beans into small pieces, remove the liquid and seeds from the tomato and chop it as well. In a heat-resistant form or frying pan, heat a little olive oil, fry the garlic, after a minute add the onion, then the rest of the vegetables and fry over low heat for several minutes. Pour in the eggs and cook, stirring, until you notice that the egg mixture begins to set at the sides. Leave the pan on the stove for a few more minutes—the middle should still be runny—then finish the frittata in the oven at 180 degrees for 15 minutes.

A frittata is a great way to use up whatever you have lying around in the fridge. Gather together the vegetables (we have broccoli, spinach, tomatoes, sweet peppers), take hard cheese, ricotta or regular cottage cheese - the omelette filling is ready. If you have leftover sausage or meat on hand, use that too.

Calculate the number of eggs for an omelet based on the size of the frying pan and the number of eaters; on average, six to ten pieces will be enough.

Beat the eggs with a pinch of salt and freshly ground pepper. There is no need to add any cream or milk; the omelette will already rise perfectly due to the proteins. You can add the cheese now, or you can sprinkle it on top once the eggs are in the pan.

As we already said, anything can be used as a filling for a frittata, the main thing is to avoid watery vegetables. If you choose to use tomatoes, be sure to simmer them with the rest of the ingredients to remove any excess moisture. It is better to first blanch hard vegetables in salted water and only then place them in the pan.

A frittata made with fat rendered from meat products is much more flavorful. Therefore, if you decide to add ham or sausage, first brown it yourself and transfer it to napkins, and fry the vegetables in the remaining fat. If meat is excluded from the filling, then a spoonful of butter or olive oil can be a worthy replacement for meat fat.

When the vegetables are half cooked, pour the eggs over them and distribute the filling throughout the omelette, lightly mixing the ingredients together. Reduce the heat and wait until the bottom of the frittata sets, place a spatula under it and lift the edges of the omelet so that the raw eggs from the surface drip into the pan.

Once the eggs are fully set (usually about 10 minutes), place the frittata under the grill until the top is as browned as your heart desires, because when you're cooking over the counter, you can do whatever you want, right?

  • Use a thick-walled frying pan. In thin-walled dishes, food may burn. If you have no choice, line the dish with parchment paper, it will help all the ingredients cook evenly. The best option is a heavy cast iron frying pan. This is a time-tested classic. When it comes to making frittatas, no thin aluminum frying pan can compare with it, even with a non-stick coating. The size of the pan also matters. It should not be too wide so that the eggs do not spread out in a thin layer. If you are using 12 eggs, use a frying pan that is approximately 25cm in diameter.
  • After removing the frittata from the oven, let it sit for a few minutes before cutting into pieces. Immediately after cooking, the dish has a very delicate consistency, and then it becomes denser, and it will be easier to cut it.
  • Do you want to make the taste of your dish more delicate? Then use dairy products - cream, milk, natural yogurt, sour cream. They can turn an ordinary omelet into a delicious creamy pie.
  • All ingredients must be fully cooked before adding to the egg mixture. This is especially true for vegetables. When raw, they will release liquid as they bake, which can make the frittata watery.
  • You can bake the frittata in small portioned frying pans and serve the dish in them. It looks very nice, homey.
  • Frittata should be served with bread, vegetables, kefir, milk or other drinks. If it contains potatoes, milk goes well with it.
  • Foods with a high moisture content are not added to the frittata or are pre-processed. That is why the core with seeds, which contains a lot of liquid, is removed from tomatoes. Zucchini or eggplants need to be fried first to evaporate the moisture.
  • Add salt according to the range of products you use. For example, if you have salty bacon, you need less salt, and if you have bland tomatoes and bell peppers, you need more. Be sure to salt the egg mixture before pouring it into the pan.
